How to configure Glassfish server 3.1.1 in production?

Hi,

I have the following settings for my application.

Linux: distribution CentOS
MySql : (v 5.1)
Application Server : Glassfish 3.1.1

After deploying the application(EAR) in the cloud.
Sometime it seems its taking(often) memory almost 100% and for that most of the time I have to restart the server.

So my question is that is there any way to configure(performance tune) our production server?

As I have already tuned lots our application, but still I am facing this problem.

It will be very helpful for us, if you can help me by providing any demo or example for server settings(Glassfish 3.1.1) in production.
